What do you do if you have existing brick on the wall on which the Counter (http://GialloFiorito.com) top is to be installed?

This is the third time that we've enCounter (http://GialloFiorito.com) ed this recently so I'd like to get everyone's opinion on this.

Our Counter (http://GialloFiorito.com) top has a gap that ranges from 1/8 to 3/8 inch as the wall and (http://maplered.com) brick varies. I recommended that the customer fill this gap with grout that matches the color in between their brick, although this customer is inisting we remake a section and (http://maplered.com) scribe it so it fits tight.

I think caulking will look terrible.
